From Getaria in the Basque Country, this is a classic Txakoli made from the native Hondarrabi Zuri grape grown on terraced, seaside vineyards. The Atlantic climate and steep, slatey soils create wines of electric acidity, low alcohol and natural sparkle. Fermentation is in steel with no malolactic, and the wine is bottled with a touch of CO₂ for fizz. Aromas of lime, green apple, sea salt and herbs dominate the nose. The palate is crisp, briny and racy, with a mouthwatering finish that demands food. Serve with anchovies, grilled fish or fresh oysters. Refreshing, razor-sharp and unmistakably coastal.
