Saladini Pilastri - Organic

Ancient noble estate

Situated two kilometres from the historic town of Spinetoli, the Conte Saladino’s family estate is steeped in history dating back over 1000 years.  Perched on the rolling hills that lead all the way to the Adriatic, the 13th century castle keeps an eye over more than 300 hectares of which more than 100 are planted to vines. The sea breezes play a massive part in cooling the vineyards and olive groves, all of which are certified organic and have been since 1996.  Saladini Pilastri was Italy’s first, certified organic winery.

Limestone soils and the south facing hills of Monte Prandone create the perfect ingredients for Trebbiano, Pecorino, Sangiovese and Montepulciano to thrive.  Varietal flavours are pure and the acidity gives a backdrop that renders oak superfluous.  The Falerio is a venerable blend of Trebbiano, Passerina and Pecorino and has an elegant bouquet of citrus fruit and pear.  The Rosso Piceno comprises 80% Sangiovese and 20% Montepulciano and is seriously appealing with fresh red fruit as well as minty and earthy characteristics.  It’s killer with roast meats and game.
