‘Paion’ takes its name from the dialect word for Sabbioni, the village that has long been home to the Bellini family and their vineyards on the banks of the Po River. Produced from hand-harvested Grappello Ruberti and crafted using the traditional method, it is an elegant expression of the estate’s enduring pursuit of excellence in sparkling wine. Delicate aromas of gladiolus, wild strawberries and raspberries are complemented by hints of black pepper, clove and freshly baked brioche from its extended lees ageing. The palate is refined and beautifully poised, with a fine, persistent mousse, vibrant acidity and a long, mineral finish. An ideal companion to seafood, sushi or fresh cheeses.
